Dear Rhona, thanks for your question. I have never seen sombreroni pasta here in Italy, so I had to look it up. It seems to be a modern creative type of ravioli made by a couple of pasta companies. I would like to order some to try myself. Although, not a traditional pasta shape, I saw recipes in which these Mexican pasta hats are filled like ravioli, then boiled and served in a tomato sauce..
